Easy Tofu Stir-Fry

A quick, flavorful dinner made with shelf-stable staples, frozen vegetables, and protein-packed tofu!
Ingredients
- 1 block extra-firm tofu, drained and cubed
- 1 bag frozen stir-fry vegetables
- 2 tablespoons oil
- ¼ cup soy sauce
- 1 tablespoon honey or brown sugar
- 1 tablespoon peanut butter
- 1 teaspoon garlic powder or minced garlic
- ½ teaspoon ground ginger, optional
- 1 tablespoon cornstarch
- 2 tablespoons water
- Cooked rice or noodles for serving
Directions
- Prep the tofu: Drain and pat the tofu dry. Cut into cubes.
- Heat 1 tablespoon of oil in a large skillet and cook the tofu until golden and lightly crispy. Remove and set aside.
- Add the remaining oil and frozen stir-fry vegetables to the skillet. Cook until heated through and tender.
- In a small bowl, whisk together the soy sauce, honey or brown sugar, peanut butter, garlic, and ginger.
- Mix the cornstarch and water, then stir it into the sauce.
- Add the tofu back to the skillet and pour the sauce over everything. Cook for 2–3 minutes, until the sauce thickens.
- Serve over rice or noodles.
