Easy Tofu Stir-Fry

A quick, flavorful dinner made with shelf-stable staples, frozen vegetables, and protein-packed tofu!

Ingredients

  • 1 block extra-firm tofu, drained and cubed
  • 1 bag frozen stir-fry vegetables
  • 2 tablespoons oil
  • ¼ cup soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon peanut butter
  • 1 teaspoon garlic powder or minced garlic
  • ½ teaspoon ground ginger, optional
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Cooked rice or noodles for serving

Directions

  1. Prep the tofu: Drain and pat the tofu dry. Cut into cubes.
  2. Heat 1 tablespoon of oil in a large skillet and cook the tofu until golden and lightly crispy. Remove and set aside.
  3. Add the remaining oil and frozen stir-fry vegetables to the skillet. Cook until heated through and tender.
  4. In a small bowl, whisk together the soy sauce, honey or brown sugar, peanut butter, garlic, and ginger.
  5. Mix the cornstarch and water, then stir it into the sauce.
  6. Add the tofu back to the skillet and pour the sauce over everything. Cook for 2–3 minutes, until the sauce thickens.
  7. Serve over rice or noodles.
